What to make, what to make? What to make for supper for your baby on St-Patrick’s Day?
How about a Green cheese! No, it does not mean you serve your baby rotten cheese. But rather, spread nice layer of green veggies to spice up your baby’s grilled cheese.

What you’ll need;
- Homemade basil pesto (see recipe below)
- Brocoli purée
- 1/4-1/2 cup of Grated Monterey Jack or Mozzarella cheese
- Small tortillas
- Butter
Basil pesto
- 2 cups of basil
- 2 garlic cloves (who only puts 2)
- 1/2 cup of grated parmesan cheese
- 1/4 of olive oil
- Pinch of salt (Avoid for baby) and a bit of pepper
Green cheese
Start by buttering one side of each tortilla. Sprinkle one of your tortillas with the grated cheese. Spread your pesto on the other slice. Then add the brocoli purée on top. Put both slices together and grill on a skillet. Once browned on both sides, place on cutting board and let cool for 10-15 min. Slice your green cheese into thin strips for younger babies or small chunks for pincher grasp.

To make a well balanced meal, I added some small pieces of chicken and a side of green apple sauce.

My daughter absolutely loved this. She couldn’t get enough. It is a good way to sneak in some greens and get them used to a different flavour!
