I don't know about your baby, but Madison is obsessed with apples. She could be in full out rage eating something else, but when she see's that apples are coming, instant smile! My little one is becoming an absolute foodie!
I wanted to make her something for breakfast that is healthy, but also right up her alley.
Here are my Apple cinnamon baby muffins!
What you will need for the muffins;
- 1 - 1.5 cups of apple purée (I used McIntosh apples but feel free to use a sweeter apple such as Honeycrisp if you prefer. The quantity is also preferential)
- 1 cup of oats
- 2 spoon fulls of plain greek yogourt (This can be substituted for vanilla greek yogourt)
- 2 eggs
- 1 teaspoon of cinnamon
- 1 teaspoon of Baking powder
- 1/2 teaspoon of Baking soda
- 1 teaspoon of vanilla if using plain greek yogourt
What you will need for topping;
- 1/2 teaspoon of cinnamon
- half an apple cut in small chunks
Start by putting your oats and apple purée together in a blender. Pulse the blender to mix the two ingredients. Add in your yogourt, eggs and vanilla. Add the dry ingredients to the mixture and blend. Put the mixture in a large or small muffin tin. Cut an apple in small pieces to add as topping. Finish by topping off each muffin with some cinnamon. Put in oven at 350oF for 15 min.
Flavour boost:
- You can add another fruit to change the flavour a bit such as strawberries and cranberries.
- Top off with another fruit purée as jam for babies under 1. For kids above the age of one, you can add apple butter or another type of jam to boost the flavour.
***Keep in mind that they will not be very sweet. There is no added sugar because it is not recommended for babies to have added sugar until after the age of one. If you prefer a sweeter mixture, you can add maple syrup or a non refined sugar of your choice.
