What’s St-Patrick’s Day without a baby friendly Cottage pie?
What you’ll need;
1 tablespoon of olive oil
1 cup of ground beef
1/4 onion
1/4 teaspoon of Thyme, Rosemary and Parsley.
1 teaspoon of minced garlic
1/2 teaspoon of garlic powder
1/2 teaspoon of tomato paste
1/2 cup of organic beef broth
1/2 cup of frozen peas/carrots.
2 potatoes
1/2 cup of cauliflower purée
1 1/2 tablespoon of unsalted butter
Meat filling
Add the olive oil to a skillet and cook the onion for 2-3 min.
Add the ground beef and sprinkle the spices on top. Cook until meat is browned.
Add the garlic and tomato paste, stir until it is all combined.
Add the beef broth and vegetables to the skillet and stir.
Once everything is cooked together, add to a blender to reduce the large chunks, but don’t blend for too long.
Put the meat filling at the bottom of your small caftan.
Potato topping
Peel and boil potatoes.
Once a fork can easily pierce through, drain except for about 1/4 cup of liquid.
Add in your butter and mash.
You can also add milk but I chose not to.
Sprinkle your garlic powder in the potatoes.
Mix in cauliflower purée and blend all of the potato mixture together.
Top your potato, cauliflower mixture on top of your meat mixture!
Bake at 400oF for 15 min! Let cool and let your little babe enjoy!
